A LAST LETTER TO ASPEN
We wrote to you once, when we were still strangers. We told you the mountains cradled the countryside. We told you the river had a gentle roar, that the air carried something we couldn't name, that the whole town seemed to be whispering stay a while.
We stayed. Tonight, we close the door.
To every soul who walked through it — thank you.
To the ones who came for a birthday, and the ones who came for no reason at all. To the ones who arrived alone and left with company. To the regulars who never needed a menu, and the first-timers who read every word of it. To the table that laughed too loudly, and the table beside it that didn't mind. To everyone who danced when the music turned — you were the best thing we ever served.
To our team: you were never staff. You were the dinner party. You carried the plates, the late nights, the doubles, the New Year's Eve that refused to end — and you made every hour of it look like joy. Whatever grace this room had, it was yours first.
And to you, Aspen. You changed us in ways we never thought possible. You still do.
We said once that ZIGZAG wasn't a restaurant — that it was a love letter to your enchanting self, an invitation to become part of our story. You accepted. Every night since, you filled these rooms with a story of your own.
A restaurant is never a building. It's a sound. Cutlery and conversation, a cork, a song someone knows all the words to. That sound doesn't end when the lights go down — it goes home with everyone who made it.
The last bite has been savored. The sun has gone behind the mountains one final time. And we hope, the way we hoped on our very first night, that you felt at home here.
You were. You always were.
